Must add a lil bit more egg white to the dough that you will use for the string so that it won’t easily breaks.
Roll them as thin as possible.
No need special cutter, just use your normal knife. Cut it thinly too.

So dainty. Not many people make it the traditional way like this anymore. Everyone prefers the quick and easy way but this design is still the best, in my opinion.
